    Cooking Steps

      Heat milk to ~185°F (steaming but not boiling)

      Stir in lemon juice and let sit for 10–15 minutes

      Strain curds through cheesecloth for 1 hour

      Blend with salt until smooth and creamy

      Refrigerate and enjoy within 5–7 days
